Sloppy 'Chos

I have sorely missed sloppy joes.  (Or, as translated for those of us in South Dakota, "barbeques.")  My go-to, quick, summertime meal was gone, since I don't want to heat the kitchen up by baking buns. 

And so was born the Sloppy 'Cho.

Topped with cheddar
Served with baked beans

We missed sloppy joes as well when we went GF. We now serve ours on top of tater tots or corn bread. Now we'll have to try potato chips.
