Confetti Beans and Rice with Chicken
This recipe comes from Success Rice, but I adapted it a bit, for economy's sake.
1 c brown rice (.20)
2 T Dijon mustard (didn't use this, SuperDad suffers from mustard phobia)
1/2 c light Caesar salad dressing (.10)
1 can black beans, rinsed (.46)
12 ounces cooked, diced chicken (2.32)
1 can Mexican-style corn, drained (.46)
4 green onions (skipped)
Spinach leaves (skipped)
Cook rice. In large bowl, combine mustard and dressing. Toss in rice, beans, chicken, corn, and green onions. Chill or serve at room temparature. Garnish with spinach leaves (Oh yes, let me spend an extra $2.00 to "garnish" the food I serve to my toddlers. Please.).
This was pretty good. The three-year-old wasn't sure, and mostly just ate the chicken and the corn, but the one-year-old fully ate two servings.
Total: $3.54
This was not, however, so easy on the diet budget. Wow.
