Tried another new recipe, adapted from All You magazine.
Dinner Update:
Grilled Chicken Kabobs
3 lbs. chicken (I actually cooked the whole bag - will eat as leftovers later) ($6.91 - ate maybe $5.18 worth)
bamboo skewers (.94)
olive oil (.25?)
salt
pepper
Served with raw carrots (.15) and watermelon (free leftovers from work party).
Total: $6.52
Soak bamboo skewers in warm water for 20 minutes. Thread chicken onto skewers. Brush with olive oil and sprinkle with salt & pepper. (Actually, I don't have a brush anymore because the kids play with it, so I mixed the chicken in a bowl with the oil and salt and pepper.) Grilled on charcoal grill for maybe 20 minutes?
It was okay, but not that much better (and more work) than just cooking in the frying pan. If we made it again, we'd definitely include some veggies on the skewers. Also, I don't know when my kids decided to stop eating chicken, but they haven't in awhile. If it isn't McDonald's cheeseburgers on hot dogs, they aren't interested. Ugh.
Budget Update:
Zero dollars left in any category. Luckily I *should* have about $34.00 coming in from Avon. That should get us through until pay day. Maybe. ;)
