#1 So Far Super Easy Gluten Free Pizza Crust

<<pizza.JPG>> We have pizza once a week.  Each week I have tweaked this recipe, not being totally content with the way it turned out.

Until now.

I think this is it, folks.  This is a crispy, crunchy crust, for a pizza slice you can actually pick up!  Finally!

1/4 c milk
2 lg. eggs
1/3 c potato starch
1/3 c sweet rice flour
1/3 c tapioca flour
1/3 t xanthan gum
1 t salt
1/8 c olive oil
Sprinkle of garlic, Italian seasoning, or whatever seasoning you like

Preheat oven to 425.
Spray 12 in. pizza pan with cooking spray.
Combine all ingredients in a bowl, then spread onto pan.
Bake 8 minutes.
Poke bubbles with a fork and add toppings (we like pizza sauce with ham and cheddar or ranch dressing with chicken and cheddar).

Bake 10-ish more minutes, until cheese is melted.
