We use our GF flours quickly enough that we just keep all of them in the pantry. We store the sepearate elements (rice, tapioca, potato starch, corn startch, and potato flour) in the gladware soup/salad size (rectangle-3 cups) and the mixes in the family size (square-13 cups).
As we get rid of the flours that we don't like to use (i.e. garbozo, fava, sourgum etc) I may use the extra space for larger element containers (deep dish-8 cups).
