Company

We had company for dinner last night. We trade off - one week at their house, the next at ours. Their kids are gluten AND dairy intolerant, so finding yummy meals that meet their dietary requirements and fit into our budget isn't easy!

Here's what we had last night:

Crock Pot Braised Chicken With Vegetables
To make this recipe dairy-free, we just sprayed the inside of the slow cooker with canola spray rather than brushing it with butter. It was very yummy. I'm not usually a fan of chicken thighs, but the slow cooker really worked to melt the fat away from the meat. Hmm... maybe I can put my own thighs in there?

We did increase the quantities of everything, in order to feed 4 adults and 5 children. I'm going to estimate this cost us about $5.40, plus the cost of spices that we already had in the cupboard.

We served it with:
Lettuce salad and dressings (1.00)
Watermelon (.38)
Home made regular bread w/butter(.30)
GF bread w/vegetable oil spread (1.00)

Peanut Butter Cookies
1 c peanut butter (.25)
1 c sugar (?)
1 t baking soda (?)
1 beaten egg (I actually didn't have eggs and made our guests bring me one, so free! Ha.)

Combine, spoon onto cookie sheet, bake for 15 minutes at 350. Become addicted.

Total for meal, feeding 9: $8.33

Egg Rolls (not gluten free - if anyone has a recipe for GF egg rolls, I'd love to hear about it!)

Frozen stir-fry veggie mix
Jello
Cheesecake brownies

I made the double batch of GF cupcakes so that I can pull them out for all the birthday parties we have to go to.
Where those egg rolls GF?

Nope. Regular frozen egg rolls.

Oh, and YES totally, we always have to have frozen cupcakes in the freezer to bring to birthday parties. More often than not other kids there will ask if they can have some of the cake we brought. I always say sure, but that I doubt they'll like it!

For gluten free egg rolls why not just replace the pastry wrap with rice paper? (Haven't tried yet but i have everything to make it with and hope it will turn out well)
