The Gluten-Free Blues?

Kind of making me laugh today. Though my kids in no way think they can't eat bread or macaroni - they eat those all the time, just GF versions. They DO, however, think they can't eat crust because it would KILL THEM DEAD because crust is SO AWFUL MOM I DON'T LIKE IT DON'T MAKE ME. ;)

Seriously, what is the deal with crust? It's like we're asking them to eat brusell sprouts.

My crazy kid eats the crusts first. It's his favorite part. My other crazy kid has never refused food of any sort, so crusts get inhaled just like everything else.

Hmm, my kids eat the crusts.

Tenille, we made a variation of your tried-and-true breakfast casserole for dinner the other night. I used mozzarella instead of cheddar and topped it with pepperoni instead of sausage/ham/bacon. I used one more potato than usual to make it a bit firmer and a little more salt & pepper to spice it up a bit more. The kids loved it. My husband called it "breakfast pizzarole." I layered it with potatoes on bottom, then beaten eggs, then the cheese, with pepperoni on top. Yum. :)
