Pork for Tacos
3 lb. pork roast (4.00)
cumin
garlic
pepper
paprika
parsley (.25 for all)
honey (.05)
Put all in crockpot. I threw mine in at lunch and cooked on high for about 4 hours, then shredded it with forks and served it on tortilla chips (.75) with shredded cheddar (.25) and cooked carrots (.50).
Total cost: $5.80
Verdict: D tossed it all over the dining room and ended up with a time out, but E ate it really well. Kids! I loved it, but I think it would be even better on tortillas rather than as nachos.
We've got a nice amount of pork left, so I'll probably make some kind of soup with it. I've got beans and corn... any suggestions?

Try getting some corn (my kids prefer the white corn) tortillas and make tacos or taquisos(sp?). spritz a cookie sheet with olive oil and lay the torts out flat, stick in the oven (about 400 degrees) for about 5 minutes. Take them out, put in some of your pork & favorite fillings (refried beans-cheap & good for ya- and cheese) fold over or roll up, place back in the oven and watch for desired crispness. When they come out, add your cold lettuce, tomato, or salsa. It's one more meal that's inexpensive, and 'normal' for GF kiddos.
